The story
Why Pommes Orréa exists.
Good fries are a matter of discipline, not invention. Ours are cut by hand from waxy potatoes, soaked to draw the starch, then cooked twice — once slowly to cook through, once fiercely for the shell.
They arrive in a vented box that keeps them crisp for the length of the drive, with rosemary salt to scatter at the table.
