Bread should take time, or it isn’t bread.
Most bread is engineered to be fast — mixed, proved and baked inside three hours. Ours ferments for a day and a half.
You will hear the difference when the crust gives, and notice it two hours later.

Slow fermentation
Thirty-six hours of cold rest. Time is the only ingredient no additive has learned to imitate.

Stone-milled grain
Milled weekly on stone, baked within days. The germ and bran stay where the flavour lives.

Nothing hidden
Flour, water, salt, culture. No improvers, no preservatives, no numbers on the label.

We do not bake a range. We bake three loaves properly, and let each one be entirely itself.

It started with a table that was always full.
There was always something proving on the counter — a bowl under a cloth, moved into the sun. Bread was not a purchase. It was a rhythm the house kept, and the reason people stayed longer than they meant to.
Years later, in a city that had everything, we could not find that loaf. So we started baking again: a mother starter fed twice daily, a stone mill, one deck oven, and a stubborn refusal to shorten the ferment.

Sourcing
Grain from growers we have met, butter from a single dairy, honey from named hives. If we cannot trace it, we do not use it.
Four suppliers. Every one visited.

Milling
We mill on stone each week, keeping the germ and bran intact. Flour is used within days, while the oils in the grain are still sweet.
Milled weekly, never stockpiled.

Fermentation
A mother starter kept alive since 2019, fed twice a day. The dough rests cold for thirty-six hours — the step everyone else skips.
36 hours. No exceptions.

Shaping
Each loaf is shaped by hand, scored by hand, and loaded by hand. Batches are kept to what two bakers can attend to properly.
Small batch, by definition.

The bake
Loaded at 4am onto a stone deck with a burst of steam, then baked dark. Colour is flavour, and we are not afraid of it.

Not a loaf on a board. A day worth sitting down for.
Bread is the excuse. What people actually remember is the hour it held open — the second cup, the conversation that ran long, the table nobody left.

The loaf goes down in the middle of the table and stays there. It is torn, not sliced. It is finished before the main course, every time.

Whole Medjool dates soaked overnight, pressed with almond milk, finished with green cardamom and a pinch of salt. No cane sugar. No concentrate. Poured over a single large cube, it is the drink our guests ask about before the bread.

I ordered once out of curiosity. It has been on a standing Friday order for eleven months. My children now ask for the bread by name.
The crust on the Terra is the closest thing I have found in this country to the bakery I used to walk to in Lyon. I do not say that lightly.
It arrived warm. Actually warm. We ate half of it standing at the kitchen counter before anyone thought to find plates.
